Recipes, Pumpkin Oats, & Giveaway!

"I knew I shouldn't have drank that diet Pepsi after dinner...", thought Meagan as she lay in bed last night. It was 11:05 and she could not fall asleep. "Is it the caffeine?...or all these new recipes I keep thinking of that is keeping me awake?" Her mind was racing with ideas for plated desserts. She has to present three plated desserts to her Chef instructor next week...and she wants amazing ideas. Her mind is in a constant battle. A battle between flavors and pastry techniques. 

She hoped to get a break today from her head...but no, the craziness continues on.

It is ridiculously cold outside today. It took my breath away as I stepped outside this morning to head to the gym. Breakfast definitely had to be something warm and cozy! Pumpkin Oats did the trick!


Pumpkin Oatbran topped with mixed berries. Hazelnut coffee. 
(1/4 c oatbran cooked in-1/2 c water, 1/4 c soymilk, pumpkin pie spice, truvia, a big dollop of pumpkin)

Today has been great so far! Gym+warm breakfast+hot coffee+great devotion=perfection.

Time to get that notebook and get these recipes down on paper....

gym, devo and yummy yogurt

Hola! 

I woke this morning before my alarm clock had a chance to go off. I bundled up and sprinted to my car...it was freezing outside. I took advantage of the extra time and lengthened my workout. While I am walking on the treadmill, I usually tend to have my prayer time. I have had a lot of things on my heart lately, so I enjoyed this mornings lengthened prayer time.

Breakfast was quick as I was starving, and delish!
I topped vanilla yogurt with chopped apples, cinnamon and fiber one cereal. So good. Despite the great workout, I felt kind of sluggish so I opted to brew two cups of coffee. =) mmm...it kept me nice and toasty.

Cinnamon Apple Crunch Yogurt. Banana on the side and hazelnut coffee. 

Devotion this morning was good. I read a little of Ephesians and also Psalm 130. Psalm talked about redemption. Ephesians talked about how God has us right where he wants us. It made me stop and think. I need to be happy with where I am in life. No need to complain. God has me where he wants me! I need to see that, and rejoice in what He is doing in my life.

I have to be at school early this morning. I need to finish a dessert that I started making yesterday. I have to present it today. Check out my school blog to see what it is!

Oregon Chai Tea and Tofu Scramble

Short post this morning. I need to get busy. At school, we have been plating desserts all week. I need to come up with a really good design before I head to school. Also, I may be going to Target before class, so I need to get a move on it. 


Yesterday, when I checked the mail, I discovered that I had recieved my free sample of Oregan Chai Tea. I couldn't wait to try it out. Also, I have been curious about some of Amy's products, so while I was at the store the other day, I picked up her Tofu Scramble Pocket Sandwich. 





What better time to try both products than breakfast? The tofu scramble was very very good. I definitely will be trying more of Amy's products. The Chai tea...not so much. It was really really sweet. Too sweet for my liking. 
I think I'll just stick to my hazelnut coffee. =)

Empty jar.

With high hopes of a delicious morning breakfast, Meagan Cochran entered her small apartment kitchen and threw open the refrigerator door. There, she spied her jar of Naturally More Peanut Butter.

"Yes!", She thought, "Peanut Butter toast, maybe?" As she unscrewed the lid, she was faced with a devastating fact.

Her jar of heaven was empty.

"NOOO!", she cried. "What am I going to do now?" Not only was it freezing outside, it was raining. A quick trip to the store was out of the question. She set the jar aside and started to make her coffee, only to come across the fact that she was completely out of her favorite Starbucks House Blend (medium roast) coffee. She would have to go with Foldgers Dark Roast.

"Ugh...what a frustrating morning.", she whined.

But then, as she stared at her humming coffee maker, an idea hit her. A great idea. A wonderful, yummy, tasty idea.

"Peanut Butter Jar Oatbran!", she thought. It would be the perfect breakfast-totally making up for her empty jar.

This simple idea turned her frustrating morning, into a delightful day.




1/4 cup oatbran, cooked in 1/2 c water & 1/4 c soymilk, raisins, a tich of brown sugar and vanilla extract. Served in PB Jar. Hazelnut coffee. Enjoyed with a great devotion.

It's a new day.

Sunday. Usually an enjoyable and relaxing day. However, Meagan did not quite enjoy her day off from school. She woke up around 7:00 AM, tried to sleep in more, but couldn't. She quickly hopped in the shower so the hot water could warm up her freezing toes.
Sipping a large mug of coffee, she worked on a school project until Cali woke up-around 9:00 AM. At 10:30, they trekked through the cold to attempt to wash their overflowing basket of dirty laundry. After a little Dollar Tree shopping, they made it back home around 2:00. Meagan had no appetite for lunch, which surprised her. She would usually be famished at this time...especially since she had no breakfast. Meagan attempted to eat a sauted veggie and salsa wrap, but gave up, and threw it away. At Cali's urging, she managed to have some tomato soup for dinner.

Monday morning. "It's a new day, today will be better!", Meagan thought as she got ready to head to the gym.
Along with the regular thirty minutes on the elliptical, she added a 10 minute walk and 5 minute jog. "I really hope my appetite comes back. I need to eat breakfast this morning!" Meag knew if she didn't eat breakfast, it would lead to what would surely become a bad day. 
Even though she wasn't as hungry as she usually would have been after showering, she made herself eat.



Quaker's Instant Strawberries and Cream oatmeal. Banana slices with a dollop of PB&Co Cinnamon Raisin Swirl PB. Hazelnut coffee.

Now, after devotion and dishes, she is feeling quite good and dreaming of ideas for Cali's Christmas present.
With plans to do well in school today, and to shop for some grocery goodies afterward, Meag is ready to face the day.

good day bad day

Although Meagan's day started out great, it has not turned out to be the best of days. Let me tell you about it....

Saturdays are Meagan's day to skip the gym in order to sleep in. She was happy about that. After enjoying a hot mug of her favorite coffee, a banana, and strawberry yogurt, she got ready to head to the school. School on a Saturday? No, just a workshop. At this workshop, Cali and Meagan learned how to make candy canes. Within a few short hours, they had conjured up many strawberry-lime candy canes. Very fun to make, but two sweet for Meagan's liking.




The rest of the after noon, they did nothing. Absolutely nothing. Around 5:00 PM,wether it was the lack of something to do, or homesickness-Meagan doesn't know-but she could feel herself becoming depressed.
Quickly she jumped up from the couch and declared, "I've got to go do something!"
"What?" replied Cali.
"If I sit here any longer, I'm going to go crazy.... Would you like to go with me?", she said.
"Um, where are you going?"
"mmm...Michael's?"
"O.K., but we are stopping at Kroger afterwards. I need more powerades."
"Okie dokie."

So, they braved the cold and made the trek across town to Michaels. While there, Cali bought her two christmas mugs (they were on sale. $1.00 each! amazing!).
This did many many things to improve her mood! Meagan is very much looking forward to cappuccino in her new mug.

The second one says "Noel" It has the cutest little penguins on it. 

Unfortunately, while at Kroger, she experienced sharp pains above her stomach.
"Why are these bothering me now? I haven't had these pains in weeks...I thought the medicine was working.", she thought to herself. So had no appetite for dinner, which made Cali upset. "You need food...especially protien.", he informed her. She tried to nibble on a cracker with some cheese, but felt sick. She tried making ramen noodles, but they looked disgusting. Finally she gave up.

Tomorrow will be better.
